Preparation Steps
- Wash and cut 3 cups of seedless watermelon into bite-sized cubes. Slice 1 ¼ cups of ripe peaches and thinly slice ¼ cup of red onion. Combine in a large mixing bowl.
- Tear ½ cup of fresh mint leaves and sprinkle them into the bowl. Gently toss the ingredients together until evenly distributed.
- In a small bowl, whisk together 2 tablespoons of extra virgin olive oil, 1 tablespoon of fresh lime juice, and 1 teaspoon of honey. Season with salt and black pepper to taste.
- Pour the dressing over the fruit mixture in the large bowl and gently toss to coat the fruits without bruising them.
- Sprinkle ½ cup of crumbled feta cheese over the top just before serving.
- Optionally garnish with toasted almonds or pistachios and extra mint leaves. Serve immediately.
