Ingredients
  

For the Filling
  • 1 pound Lean ground beef or turkey
  • 1 cup Cooked brown rice adds fiber
  • 1 can Diced tomatoes undrained
  • ½ cup Tomato sauce
  • ¼ cup Fresh parsley chopped
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 1 teaspoon Freshly cracked black pepper
  • ½ teaspoon Red pepper flakes optional
For the Peppers
  • 4 medium Bell peppers any color
For the Topping
  • 1 cup Shredded mozzarella cheese or alternative

Method
 

Preparation Steps
  1. Preheat the oven to 375°F (190°C).
  2. Slice off the tops of the bell peppers and scoop out the seeds and membranes.
  3. In a large skillet, warm olive oil over medium heat and sauté diced onion for 5-7 minutes until translucent.
  4. Add minced garlic and cook for an additional minute. Then, add the ground beef or turkey and cook until browned, about 8-10 minutes.
  5. Mix in diced tomatoes, tomato sauce, cooked brown rice, and parsley, stirring until well combined.
  6. Sprinkle in oregano, basil, salt, black pepper, and red pepper flakes. Stir well to incorporate.
  7. Fill each bell pepper with the savory mixture, mounding slightly at the top.
  8. Pour half an inch of water into the baking dish and cover with aluminum foil.
  9. Bake covered for 30 minutes, then remove the foil.
  10. Sprinkle cheese on top of each pepper and bake uncovered for an additional 30-40 minutes until cheese is golden brown.
  11. Allow to cool slightly before serving.
