Step-by-Step Instructions
  1. In a large mixing bowl, combine the fresh parsley, cilantro, mint, lemon juice, minced garlic, cumin, coriander, sumac, cayenne pepper (if using), and olive oil. Stir well until all ingredients are fully blended.
  2. Add the chicken pieces to the bowl, ensuring each piece is generously coated. Cover with plastic wrap and allow to marinate for at least 1 hour in the refrigerator.
  3. About 15 minutes before cooking, preheat your grill to medium-high heat (375°F to 400°F).
  4. Grill the chicken for 6-8 minutes on each side until the internal temperature reaches 165°F.
  5. Remove chicken from the grill, let it rest for a few minutes, and garnish with fresh herbs and a sprinkle of sumac.
