Step-by-Step Instructions for BBQ Chicken Stuffed Sweet Potatoes
  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes and poke holes in each with a fork. Place them on a baking sheet lined with parchment paper.
  2. Bake the sweet potatoes for about 60 minutes, or until fork-tender and caramelized.
  3. Heat avocado oil in a sauté pan over medium heat. Season the chicken with salt and pepper, then add to the pan. Cook for 5 minutes, until golden brown.
