Step-by-Step Instructions
  1. In a large bowl, mix together olive oil, soy sauce, red wine vinegar, Worcestershire sauce, minced garlic, onion powder, black pepper, smoked paprika, and salt. Coat the Tri-Tip in the marinade.
  2. Place the marinated Tri-Tip in a resealable bag, pour the remaining marinade over it, seal tightly, and refrigerate for at least 1 hour or overnight.
  3. Preheat the grill to medium-high heat, around 375°F (190°C).
  4. Remove the Tri-Tip from the marinade, let excess liquid drip off, and grill each side for 5-7 minutes until a dark crust forms.
  5. Shift the Tri-Tip to a cooler area of the grill, close the lid, and cook for another 30-40 minutes until it reaches an internal temperature of 135°F (57°C).
  6. Transfer the cooked Tri-Tip to a cutting board, loosely cover with aluminum foil, and let it rest for 10-15 minutes.
  7. Slice the Tri-Tip against the grain into thin strips.
  8. Assemble your sandwich by layering sliced Tri-Tip on halved rolls with your choice of toppings.
