- In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, paprika, along with salt and pepper to taste.
- Add the chicken tenders into the bowl with the marinade, ensuring each tender is thoroughly coated. Cover with plastic wrap and refrigerate for at least 30 minutes.
- Preheat your grill or oven to medium heat (about 350°F or 175°C).
- Remove the marinated chicken tenders from the fridge and place them on the preheated grill or in a baking dish. Cook for approximately 20–25 minutes.
- Add the halved cherry tomatoes and sliced kalamata olives to the grill or baking dish in the last few minutes.
- Once fully cooked, remove from heat and sprinkle with crumbled feta cheese and chopped fresh parsley.
