- Begin by slicing your tender brisket into thin, even pieces, ideally around ¼ inch thick.
- Fill a shallow dish with warm water. Immerse one rice paper wrapper for 10 to 15 seconds, then lay it flat on a damp kitchen towel.
- On the lower third of the softened rice paper, arrange a few slices of brisket, cucumbers, carrots, and bean sprouts. Add fresh herbs.
- Fold the sides of the rice paper over the filling, then roll it tightly upwards from the bottom.
- Repeat the process with the remaining wrappers and filling, and arrange them on a serving plate.
- Prepare a selection of your favorite dipping sauces, serve the rolls on a platter with sauces around for easy dipping.
