  • 4 thighs bone-in, skin-on chicken these provide the best flavor and moisture during cooking
  • salt and pepper season to taste
For the Marinade
  • 4 cloves garlic minced
  • 2 lemons juice and zest brings a bright, zesty note
  • 0.25 cup olive oil helps keep the chicken moist
  • 1 tablespoon fresh rosemary or dried
  • 1 tablespoon fresh thyme or dried
For Garnish
  • 1 slices lemon for flavor and garnish
  • fresh parsley optional

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Mix together garlic, lemon juice and zest, olive oil, rosemary, thyme, salt and pepper in a bowl.
  3. Marinate the chicken in the mixing bowl for at least 30 minutes.
  4. Transfer the marinated chicken to a baking dish, skin side up, pouring any remaining marinade over it.
  5. Arrange lemon slices on top of the chicken.
  6. Bake for 40–45 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Baste the chicken midway through cooking.
  8. Let chicken rest for 5–10 minutes after baking.
  9. Garnish with fresh parsley before serving.
