Preparation
- Preheat the oven to 375°F (190°C).
- Mix together garlic, lemon juice and zest, olive oil, rosemary, thyme, salt and pepper in a bowl.
- Marinate the chicken in the mixing bowl for at least 30 minutes.
- Transfer the marinated chicken to a baking dish, skin side up, pouring any remaining marinade over it.
- Arrange lemon slices on top of the chicken.
- Bake for 40–45 minutes, or until the internal temperature reaches 165°F (75°C).
- Baste the chicken midway through cooking.
- Let chicken rest for 5–10 minutes after baking.
- Garnish with fresh parsley before serving.
