Method
 

Preparation
  1. Peel and finely chop the red onion and ginger. Rinse and chop the plums, removing the pits.
  2. In a medium pan, heat olive oil over medium heat. Sauté the onions and ginger for about 5 minutes.
  3. Add chopped plums, red wine vinegar, sweetener, and spice blend to the pan. Stir until well combined.
  4. Lower the heat and cover the pan, letting it simmer for about 15 minutes while stirring occasionally.
  5. After 15 minutes, uncover and increase the heat to medium-high. Stir continuously for about 1 minute.
  6. For a smoother consistency, blend the chutney with an immersion blender or in a regular blender.
  7. Adjust seasoning with salt and pepper. Taste for balance before jarring.
  8. Transfer the warm chutney into sterilized jars, seal tightly, and cool at room temperature.
