- Peel and finely chop the red onion and ginger. Rinse and chop the plums, removing the pits.
- In a medium pan, heat olive oil over medium heat. Sauté the onions and ginger for about 5 minutes.
- Add chopped plums, red wine vinegar, sweetener, and spice blend to the pan. Stir until well combined.
- Lower the heat and cover the pan, letting it simmer for about 15 minutes while stirring occasionally.
- After 15 minutes, uncover and increase the heat to medium-high. Stir continuously for about 1 minute.
- For a smoother consistency, blend the chutney with an immersion blender or in a regular blender.
- Adjust seasoning with salt and pepper. Taste for balance before jarring.
- Transfer the warm chutney into sterilized jars, seal tightly, and cool at room temperature.
