  • 1 cup Sweet Pepper diced
  • 2 tablespoon Garlic minced
  • 1 cup Chicken Broth or vegetable broth
  • 1 can Tomato Paste 5.5-6 oz
  • 1 tablespoon Chili Powder adjust to taste
  • 1 can Beans 19 oz, rinsed and drained
For Assembly
  • 2 cups Cheese shredded
  • 6-8 large Flour Tortillas or corn tortillas for gluten-free
  • 1 tablespoon Vegetable or Olive Oil to prevent sticking
  • 1 optional Jalapeno seeded and diced
  • Hot Sauce/Sriracha to taste, optional

Method
 

Step-by-Step Instructions
  1. Prepare all your ingredients by measuring and chopping them.
  2. In a skillet, heat 1 tablespoon of oil, add ground pork, and cook until browned.
  3. Add minced garlic and diced onion. Cook until onion is translucent.
  4. Stir in diced sweet pepper and sauté for an additional minute.
  5. Add tomato paste and chili powder. Cook for 2 minutes, mixing well.
  6. Pour in chicken broth and add beans, simmer for 10 minutes.
  7. Taste and adjust seasoning as necessary.
  8. Lay out tortillas and scoop filling onto each, add jalapeños and cheese if desired.
  9. Roll each tortilla tightly and pan-fry or bake until golden brown.
  10. Serve warm with optional toppings such as salsa or guacamole.
