- In a large mixing bowl, combine 8 oz of cream cheese, 1 tablespoon of freshly grated lemon zest, 2 tablespoons of lemon juice, 1 tablespoon of capers, and 2 tablespoons of chopped fresh dill. Blend until smooth and creamy.
- Take your large seedless cucumber and, using a julienne peeler, slice it lengthwise into thin strips, aiming for about ⅛ inch thick.
- Lay one cucumber slice flat on a clean cutting board. Spread 1 to 2 teaspoons of the creamy cheese mixture evenly over the entire length of the cucumber slice.
- Place a piece of smoked salmon atop the cream cheese-covered cucumber slice.
- Carefully roll the cucumber slice tightly, starting from one end where the smoked salmon is placed.
- Once you have rolled all the slices, arrange them on a serving platter. Serve immediately.
