- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat together 1 cup of softened unsalted butter and ¼ cup of powdered sugar until light and fluffy, about 3-4 minutes.
- Stir in 1 teaspoon of almond extract and the optional egg yolk until well incorporated.
- Gradually mix in 2 ½ cups of all-purpose flour and ¼ teaspoon of salt until the dough comes together.
- Fold in ¼ cup of chopped cherries gently using a spatula.
- Use about a tablespoon of dough for each cookie, rolling it into a ball and flattening slightly on the prepared baking sheet.
- Sprinkle sliced almonds on top of each cookie before baking, if desired.
- Bake for 10 to 12 minutes or until edges are golden and centers remain soft.
- Allow to cool on the baking sheet for about five minutes before transferring to a wire rack.
