Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat together 1 cup of softened unsalted butter and ¼ cup of powdered sugar until light and fluffy, about 3-4 minutes.
  3. Stir in 1 teaspoon of almond extract and the optional egg yolk until well incorporated.
  4. Gradually mix in 2 ½ cups of all-purpose flour and ¼ teaspoon of salt until the dough comes together.
  5. Fold in ¼ cup of chopped cherries gently using a spatula.
  6. Use about a tablespoon of dough for each cookie, rolling it into a ball and flattening slightly on the prepared baking sheet.
  7. Sprinkle sliced almonds on top of each cookie before baking, if desired.
  8. Bake for 10 to 12 minutes or until edges are golden and centers remain soft.
