Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Spread half of the tortilla chips evenly across the bottom of the prepared baking dish.
  3. In a mixing bowl, toss the shredded cooked chicken with half of the enchilada sauce until well coated.
  4. Sprinkle half of the shredded cheese over the chicken mixture.
  5. Add another layer of tortilla chips on top of the cheese, followed by the remaining chicken mixture and enchilada sauce.
  6. Top everything with the remaining cheese.
  7. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10–15 minutes until the cheese is melted and bubbly.
  8. Let cool for a couple of minutes, then serve hot with sour cream and chopped green onions.
