Ingredients
  

For the Sweet Potatoes
  • 4 small sweet potatoes serves as the base
  • 1 tablespoon extra virgin olive oil for sautéing
For the Filling
  • 1 large brown onion finely sliced
  • 1 clove garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon ground coriander optional
  • 1 can black beans drained
For the Toppings
  • 1 cup sweet cherry tomatoes chopped
  • 0.25 small red onion diced
  • 1 unit lime for juice
  • 2 unit avocados mashed
  • fresh coriander for serving
  • fresh red chili optional, sliced

Method
 

Instructions
  1. Preheat your fan-forced oven to 180°C (350°F).
  2. After washing and drying, wrap the sweet potatoes in foil and bake for approximately 1 hour.
  3. Heat olive oil in a frying pan and sauté the onion for 5-8 minutes until soft.
  4. Add the minced garlic, ground spices, and drained black beans to the onions, mixing well.
  5. In a bowl, mash avocados with diced red onion and lime juice to prepare guacamole.
  6. Slice the baked sweet potatoes open and fluff the insides; fill each with the black bean mixture.
  7. Top with guacamole, chopped sweet cherry tomatoes, coriander, and optional chili slices.
