  • 1.5 lbs Boneless skinless chicken breasts cut into bite-size pieces
  • 1 tablespoon Olive oil for searing
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried Italian herbs
  • 0.5 teaspoon Smoked paprika
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon Black pepper
For the Sauce
  • 2 tablespoons Unsalted butter
  • 4 cloves Garlic minced
  • 1 cup Heavy cream room temperature
  • 1 cup Crumbled feta cheese
  • 0.5 cup Freshly grated Parmesan cheese
  • 1.5 teaspoons Truffle oil drizzle to taste
For the Crispy Parmesan Leeks
  • 2 medium Leeks thinly sliced
  • 1 tablespoon Olive oil for roasting
  • 0.25 cup Finely grated Parmesan for leeks
  • 1 pinch Kosher salt for leeks
  • 1 pinch Black pepper for leeks
Optional Additions
  • 8 oz Fettuccine cooked al dente
  • 1 tablespoon Chopped fresh parsley or thyme for garnish

Method
 

Step-by-Step Instructions
  1. Season the chicken pieces with olive oil, garlic powder, Italian herbs, smoked paprika, salt, and pepper. Sear in a skillet over medium-high heat for 3-4 minutes per side until cooked.
  2. Preheat the oven to 400°F (200°C). Toss leeks with olive oil, grated Parmesan, salt, and pepper. Roast for 12-15 minutes until crispy.
  3. In a saucepan, melt butter and sauté minced garlic for 1-2 minutes. Add heavy cream and whisk. Stir in feta and Parmesan until smooth.
  4. Combine the cooked chicken with the Alfredo sauce and drizzle in truffle oil. Stir to coat and heat through for 1-2 minutes.
  5. Serve chicken Alfredo over fettuccine if using, and top with crispy leeks. Garnish with fresh herbs and lemon wedges.
