Ingredients

  • 1 pound Boneless Skinless Chicken Breast or Thighs Substitute with shrimp if desired.
  • 2 tablespoons Olive Oil Vegetable oil works too.
  • 2 tablespoons Unsalted Butter Use salted butter if preferred.
  • 4 cloves Garlic Minced.
  • 1 teaspoon Smoked Paprika Regular paprika can be used.
  • 1 teaspoon Onion Powder Optional.
  • to taste Salt and Black Pepper Adjust according to personal taste.
  • 2 tablespoons Chopped Fresh Parsley For garnish.
For the Pasta Alfredo
  • 12 ounces Spaghetti or Fettuccine Use gluten-free pasta if needed.
  • 1 cup Heavy Cream Whole milk can lighten it.
  • 1 cup Grated Parmesan Cheese Alternatives include Pecorino Romano or Asiago.
  • 2 tablespoons Cajun Seasoning Adjust according to heat preference.
  • 1 teaspoon Red Pepper Flakes Optional for extra heat.

Method
 

Cooking Steps
  1. Cook the pasta in boiling salted water until al dente, about 8-10 minutes. Reserve ¼ cup pasta water, drain, and set aside.
  2. Cut chicken into bite-sized pieces and season with smoked paprika, onion powder, salt, and black pepper.
  3. Heat olive oil in a skillet over medium-high heat. Sear chicken for 3-4 minutes on each side until golden brown.
  4. Melt unsalted butter in the skillet, add minced garlic, and sauté for about 1 minute until fragrant.
  5. In a separate saucepan, melt more butter, add another clove of minced garlic, then pour in heavy cream and simmer for 2-3 minutes.
  6. Mix in Cajun seasoning and Parmesan cheese into the cream sauce, whisk until thickened, about 3-5 minutes.
  7. Combine the pasta with the Cajun Alfredo sauce, adding reserved pasta water to adjust consistency.
  8. Serve by plating pasta topped with chicken bites and sprinkle with parsley.
