Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss halved baby potatoes with olive oil, salt, pepper, and hot honey. Arrange cut-side down on the baking sheet.
  3. Roast for 30–35 minutes, flipping halfway through.
  4. Season chicken with salt and pepper. In a skillet, heat olive oil and sear chicken for 6–7 minutes per side until golden brown.
  5. Remove chicken and set aside.
  6. In the same skillet, melt butter and sauté mushrooms for 7–8 minutes. Add minced garlic and cook for 1–2 minutes.
  7. Pour in heavy cream, simmer for 2–3 minutes, then stir in parmesan until melted.
  8. Return chicken to the skillet, simmer for 3–4 minutes.
  9. Serve creamy chicken Alfredo with hot honey roasted potatoes and garnish with parsley.
