Preparation
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss halved baby potatoes with olive oil, salt, pepper, and hot honey. Arrange cut-side down on the baking sheet.
- Roast for 30–35 minutes, flipping halfway through.
- Season chicken with salt and pepper. In a skillet, heat olive oil and sear chicken for 6–7 minutes per side until golden brown.
- Remove chicken and set aside.
- In the same skillet, melt butter and sauté mushrooms for 7–8 minutes. Add minced garlic and cook for 1–2 minutes.
- Pour in heavy cream, simmer for 2–3 minutes, then stir in parmesan until melted.
- Return chicken to the skillet, simmer for 3–4 minutes.
- Serve creamy chicken Alfredo with hot honey roasted potatoes and garnish with parsley.
