- Begin by heating 1 tablespoon of olive oil in a large pot over medium heat. Once the oil glistens, add 3 minced garlic cloves and 1 sliced red bell pepper. Sauté for 2-3 minutes until fragrant.
- Pour in 1 can of full-fat coconut milk, stirring well to combine with the sautéed mixture. Allow this to come to a gentle simmer for about 2 minutes.
- Add 1 tablespoon of fish sauce (or soy sauce), along with 1 tablespoon of fresh lime juice, ¼ teaspoon of salt, and ¼ teaspoon of ground black pepper. Simmer for about 3-4 minutes.
