Step-by-Step Instructions
  1. Preheat your oven to 350°F (177°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, cream together unsalted butter, granulated sugar, and light brown sugar until light and fluffy, about 3-5 minutes.
  3. Add in the egg yolk, light corn syrup, vanilla extract, and maple extract, mixing until smooth.
  4. In another bowl, whisk together the flour, cinnamon, nutmeg, baking soda, and salt. Gradually stir into the wet ingredients until just combined.
  5. Shape the dough into 1.5-inch balls and roll each in granulated sugar.
  6. Place the dough balls on the prepared baking sheets, spaced about 2 inches apart. Bake for 10-12 minutes, until the edges are set.
