Step-by-Step Instructions
  1. In a mixing bowl, combine chipotle peppers, garlic powder, onion powder, ground cumin, smoked paprika, lime juice, olive oil, salt and pepper. Stir well to create a marinade. Coat the chicken thoroughly and let marinate for 20-30 minutes.
  2. Preheat grill or oven to 400°F (200°C). Grill chicken for 5-7 minutes per side or bake for 20-25 minutes until fully cooked. Let rest for 5 minutes before slicing.
  3. Blend Greek yogurt, chipotle pepper, lime juice, garlic powder, and salt until smooth for the chipotle crema.
  4. Warm black beans and corn in the microwave or saucepan until heated through.
  5. Assemble by placing cooked rice at the bottom, followed by grilled chicken, black beans, corn, diced avocado, and drizzle with chipotle crema. Garnish with cilantro.
