Method
 

Cooking Steps
  1. Prepare all ingredients by dicing onions and carrots, measuring peas, and rinsing rice until water runs clear.
  2. Heat olive oil in a large pot and sauté chopped onions for 3-4 minutes until translucent.
  3. Add diced carrots and sauté for 4-5 minutes until they soften.
  4. Stir in rinsed rice and toast for 1-2 minutes with vegetables.
  5. Add vegetable broth, bring to a boil, then reduce heat and cover to simmer for 18-20 minutes.
  6. Five minutes before cooking time ends, add peas and cover.
  7. Fluff rice with a fork, season with salt and pepper, and serve.
  8. If desired, garnish with fresh herbs before serving.
