Cooking Steps
- Prepare all ingredients by dicing onions and carrots, measuring peas, and rinsing rice until water runs clear.
- Heat olive oil in a large pot and sauté chopped onions for 3-4 minutes until translucent.
- Add diced carrots and sauté for 4-5 minutes until they soften.
- Stir in rinsed rice and toast for 1-2 minutes with vegetables.
- Add vegetable broth, bring to a boil, then reduce heat and cover to simmer for 18-20 minutes.
- Five minutes before cooking time ends, add peas and cover.
- Fluff rice with a fork, season with salt and pepper, and serve.
