  1. Start by draining the firm tofu and pressing it between paper towels or a clean cloth to remove excess moisture. Once drained, cut the tofu into small cubes, about ½ inch in size.
  2. In a large skillet or wok, pour in the vegetable oil and heat over medium-high heat for about 2 minutes.
  3. Add the cubed tofu to the skillet, ensuring the pieces are in a single layer. Sauté for 5-7 minutes, turning occasionally.
  4. Once the tofu is golden and crispy, add your mixed vegetables. Stir them into the skillet and cook for an additional 3-4 minutes.
  5. Next, add the cooked, day-old rice to the skillet. Use a spatula or wooden spoon to break up any clumps.
  6. Drizzle the soy sauce evenly over the rice mixture, stirring well to ensure all ingredients are coated.
