Ingredients

  • 2 tablespoons olive oil adds richness and flavor

  • 1 medium yellow onion thinly sliced
  • 2 cups mushrooms finely chopped, cremini or button
  • 2 cloves garlic minced
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried
  • salt to taste
  • black pepper to taste
  • 2 tablespoons all-purpose flour helps thicken filling
  • cup vegetable broth or water
  • ¼ cup heavy cream or full-fat milk
Pastry
  • 2 sheets frozen puff pastry thawed
  • 1 large egg for egg wash
Garnish
  • fresh thyme sprigs for serving
  • sea salt flakes for a fancy touch

Method
 

Preparation
  1. Heat olive oil and unsalted butter in a skillet over medium heat. Sauté sliced onion until caramelized, about 8 to 10 minutes.
  2. Add chopped mushrooms, minced garlic, thyme, salt, and pepper; continue to sauté for 6 to 8 minutes.
  3. Stir in flour, cooking for 1 to 2 minutes; add broth and cream. Simmer for 3 to 4 minutes until thickened.
  4. Roll out thawed pastry sheets and cut into 6 squares each.
  5. Place filling on one half of each pastry square. Brush edges with water and fold over, sealing with a fork.
  6. Brush tops with beaten egg and sprinkle with salt and thyme before baking.
  7. Preheat oven to 400°F (200°C) and bake for 20 to 25 minutes until golden brown.
  8. Cool on a wire rack for 5 minutes before serving.
