- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large mixing bowl, combine the shredded chicken, black beans, corn kernels, salsa, taco seasoning, and sour cream. Stir until well mixed.
- Spread half of the crushed tortilla chips or torn tortillas evenly across the bottom of your greased baking dish.
- Spoon half of the chicken mixture over the layer of tortilla chips and sprinkle with the Mexican cheese blend.
- Repeat with the remaining tortilla chips and chicken mixture, finishing with the remaining cheese.
- Scatter the sliced black olives over the top layer of cheese.
- Bake for 25 to 30 minutes until the cheese is melted and bubbling.
- Let the casserole rest for 5 to 10 minutes before serving and garnish with chopped cilantro.
