  • 1 cup sour cream richens the casserole and balances the spices.
  • 1 cup Mexican cheese blend gooey, melty top layer.
  • 1 cup sliced black olives adds a salty brininess on top.
  • ¼ cup chopped fresh cilantro brightens the dish and adds freshness.
  • 2 cups crushed tortilla chips or torn soft tortillas provides that crunch with every bite.

Method
 

Directions
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn kernels, salsa, taco seasoning, and sour cream. Stir until well mixed.
  3. Spread half of the crushed tortilla chips or torn tortillas evenly across the bottom of your greased baking dish.
  4. Spoon half of the chicken mixture over the layer of tortilla chips and sprinkle with the Mexican cheese blend.
  5. Repeat with the remaining tortilla chips and chicken mixture, finishing with the remaining cheese.
  6. Scatter the sliced black olives over the top layer of cheese.
  7. Bake for 25 to 30 minutes until the cheese is melted and bubbling.
  8. Let the casserole rest for 5 to 10 minutes before serving and garnish with chopped cilantro.
