Cooking Steps
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely minced onion and sauté for about 3-5 minutes until translucent.
  2. Stir in 2 minced garlic cloves and allow to cook for another minute.
  3. Add 1 pound of ground meat, diced chicken, or pressed tofu and cook for 5-7 minutes.
  4. Sprinkle in salt, pepper, and a pinch of paprika to taste while cooking.
  5. Stir in 1 diced bell pepper and 1 finely grated zucchini, sauté for 5-7 minutes.
  6. Pour in a 14.5-ounce can of diced tomatoes, 1 tablespoon of tomato paste, and 1 cup of broth. Stir and bring to simmer.
  7. Reduce heat to low, cover skillet, and simmer for 10-15 minutes.
  8. Cook 8 ounces of pasta or rice until al dente, then stir into the sauce.
  9. Mix in 1 cup of shredded cheddar cheese until melted.
  10. Serve hot, garnished with fresh parsley and mild paprika, alongside crusty bread.
