Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat a drizzle of olive oil or a pat of butter over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until it becomes translucent and fragrant. Then, introduce the minced garlic, cooking for an additional minute.
  3. Add the fresh spinach to the skillet with the sautéed onions and garlic, cooking for 2-3 minutes until the spinach wilts down. Stir well to combine.
  4. In a mixing bowl, crack in the 4 large eggs and pour in 1 cup of milk. Whisk together until smooth. Season with salt, black pepper, and nutmeg if using.
  5. Carefully add the sautéed onion, garlic, and spinach mixture to the egg and milk blend, stirring gently to combine. Fold in your choice of shredded cheese.
  6. Lightly grease a pie dish or baking dish with olive oil or butter.
