Ingredients
  

For the Rollatini
  • 4-5 zucchinis thinly sliced
  • tablespoon olive oil a drizzle
  • 1 cup fresh vegan ricotta
  • 1 lb fresh spinach finely chopped
  • to taste fresh basil leaves chopped
  • 1 tablespoon Italian seasoning
  • pinch salt or to taste
For the Sauce
  • 1 cup marinara sauce
  • dairy-free mozzarella cheese use as much as desired

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, sauté the chopped spinach for about 3-5 minutes until wilted and moisture has evaporated. Set aside.
  3. Slice the zucchinis into even, thin pieces approximately ⅛ inch thick.
  4. Arrange zucchini slices on a baking sheet, drizzle with olive oil, and sprinkle with salt. Bake for 15-20 minutes.
  5. In a bowl, mix together the vegan ricotta, sautéed spinach, chopped basil, Italian seasoning, and salt.
  6. Spread marinara sauce in a baking dish, lay out zucchini slices, add filling, and roll them up.
  7. Drizzle more marinara sauce and sprinkle mozzarella cheese on top.
  8. Bake for 20 minutes until heated through and cheese is melted.
  9. Let cool for about 5 minutes before serving.
