Preparation
- Preheat the oven to 400°F (200°C).

- Slice the zucchinis into even, thin pieces approximately ⅛ inch thick.

- In a bowl, mix together the vegan ricotta, sautéed spinach, chopped basil, Italian seasoning, and salt.
- Spread marinara sauce in a baking dish, lay out zucchini slices, add filling, and roll them up.
- Drizzle more marinara sauce and sprinkle mozzarella cheese on top.
- Bake for 20 minutes until heated through and cheese is melted.
- Let cool for about 5 minutes before serving.
