Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Pierce 4 medium sweet potatoes with a fork and prepare a baking sheet lined with parchment paper.
  2. Place the sweet potatoes on the baking sheet and bake for about 60 minutes until tender.
  3. Combine 1 cup of crumbled feta cheese, ½ cup of chopped black olives, and ½ cup of sun-dried tomatoes in a large mixing bowl.
  4. Add minced garlic, chopped fresh parsley, and dried oregano to the mixture.
  5. Drizzle 2 tablespoons of extra virgin olive oil over the feta mixture and season to taste with salt and pepper.
  6. Remove the sweet potatoes from the oven and let them cool slightly. Slice them lengthwise and fluff the insides with a fork.
  7. Top each sweet potato with the feta and olive mixture, then serve immediately.
