- Preheat your oven to 400°F (200°C). Pierce 4 medium sweet potatoes with a fork and prepare a baking sheet lined with parchment paper.
- Place the sweet potatoes on the baking sheet and bake for about 60 minutes until tender.
- Combine 1 cup of crumbled feta cheese, ½ cup of chopped black olives, and ½ cup of sun-dried tomatoes in a large mixing bowl.
- Add minced garlic, chopped fresh parsley, and dried oregano to the mixture.
- Drizzle 2 tablespoons of extra virgin olive oil over the feta mixture and season to taste with salt and pepper.
- Remove the sweet potatoes from the oven and let them cool slightly. Slice them lengthwise and fluff the insides with a fork.
- Top each sweet potato with the feta and olive mixture, then serve immediately.
