- In a medium bowl, combine minced ginger, minced garlic, low-sodium soy sauce, honey, and lime juice. Whisk until fully blended.
- Cut the chicken breasts into bite-sized cubes. Add to the marinade, ensuring they're thoroughly coated. Cover and refrigerate for at least one hour, or up to overnight.
- Soak wooden skewers in water for about 30 minutes. Thread marinated chicken onto each skewer.
- Preheat your grill to medium-high heat (around 400°F/200°C) for about 10 minutes.
- Grill the skewers for 10-12 minutes, turning occasionally, until golden-brown and cooked through (internal temperature of 165°F/75°C).
- Remove from the grill and sprinkle with toasted sesame seeds. Serve warm with lime wedges.
