Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Line a 9-inch pie dish with the pie crust and prick the bottom with a fork. Blind bake for 10–12 minutes until lightly golden. Allow to cool slightly.
  2. Heat a tablespoon of olive oil or butter in a skillet over medium heat. Add shrimp and season with salt and pepper. Cook 2–3 minutes until shrimp are pink and opaque. Remove from heat to cool.
  3. In a mixing bowl, whisk together three large eggs and 1 cup of heavy cream. Add minced garlic, lemon zest, salt, and pepper. Stir in green onions and most of the shredded Gruyère cheese.
  4. Layer cooked shrimp in the pre-baked crust. Pour the egg mixture over the shrimp, then top with remaining Gruyère cheese and chopped parsley.
  5. Bake on a baking sheet for 35–40 minutes until filling is set and top is golden. Let rest for 10 minutes before slicing.
