Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the peanut butter and honey until smooth.
  3. In a separate bowl, mix the rolled oats and cinnamon together.
  4. Fold the chopped apples into the peanut butter and honey mixture.
  5. Gradually add the dry oat and cinnamon mixture to the wet ingredients.
  6. Fold in the chopped walnuts or pecans and dried cranberries or raisins.
  7. Using a tablespoon, scoop dollops of dough onto the prepared baking sheet.
  8. Bake the cookies for 12-15 minutes, until golden brown around the edges.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
