Step-by-Step Instructions for Flaky Sweet Almond Pastry
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine almond paste, granulated sugar, softened butter, egg yolk, and almond extract until smooth.
  3. Roll out the puff pastry to a rectangle of about 10×12 inches on a floured surface.
  4. Spread the almond filling down the center third of the pastry, leaving space at the edges.
  5. Fold the sides of the puff pastry over the almond filling and pinch the edges to seal.
  6. Whisk together one egg with milk for the egg wash and coat the top of the pastry evenly.
  7. Sprinkle sliced almonds over the pastry and press them down lightly.
  8. Lightly score the top of the pastry in a decorative pattern, being careful not to cut through.
  9. Bake for 20–25 minutes until golden and flaky.
  10. Allow to cool for 10–15 minutes, then dust with powdered sugar before serving.
