- In a large pot over medium heat, pour in 4 cups of chicken broth and add 2 tablespoons of miso paste. Stir continuously for about 2-3 minutes until the miso is fully dissolved, and the broth is steaming.
- Add 1 tablespoon of freshly minced ginger and 1 tablespoon of minced garlic to the pot. Stir the mixture for an additional 1-2 minutes, allowing the garlic and ginger to become fragrant and golden.
- Introduce 1 cup of fresh spinach and ½ cup of sliced mushrooms to the broth. Gently stir everything together and bring the mixture back to a gentle simmer for about 3-5 minutes.
- Next, add 4 ounces of fresh ramen noodles to the simmering broth. Cook according to package instructions, usually about 3-4 minutes, until they are tender yet still slightly chewy.
- Once the noodles are cooked, shred the rotisserie chicken into bite-sized pieces and stir them into the pot along with 1 tablespoon of soy sauce.
- If you’re including soft-boiled eggs, bring a small pot of water to a boil while the ramen simmers. Carefully add the eggs and boil for 6-7 minutes.
