  • 2 green chilies chopped Adjust to tolerance.
  • ¼ cup fresh cilantro Chopped.
For the Liquid
  • 1 cup buttermilk Provides moisture.

Method
 

Preparation Steps
  1. Thinly slice the onions and place in a bowl. Sprinkle salt and massage gently for 2-3 minutes.
  2. In a separate bowl, mix the dried ingredients until smooth.
  3. Add ginger, green chilies, cilantro, and buttermilk to the onions, mixing well.
  4. Gradually add the dry mix to the wet mixture, folding until just combined.
  5. Heat oil in a deep-fryer to 350-375°F (175-190°C).
  6. Drop spoonfuls of the onion mixture into the hot oil, fry for 3-5 minutes until golden.
  7. Remove with a slotted spoon and drain on paper towels.
